I drank absinthe a few years back in a club in barcelona during a short trip. They use to put the sugar on the spoon first and then pour the "green fairie" over it, then flame it to caramelize, stir into the absinthe and add water until it "louches" (turns white).

Right. This animation seems to imply that adding sugar water is enough. Personally, I like the fact that the fire burns off a lot of the alcohol. I have a low tolerance and would like to experience the absinthe as something more than mere drunkenness. Unfortunately, I don't like the taste of anis (black liquorice), and thus wasn't able to enjoy the absinthe.
