I am 70% sure you're not supposed to handle food with aluminum of that kind. Gives you cancer.

the few aluminum ions that make their way into the food are not harmful
if maybe two dissimilar metals in an electrolyte solution were present, it would make a battery and many metal ions would make their way into the food

Doesn't the "soft" alluminum alloy that he uses leave traces, though? I work with that stuff sometimes (stage building) and have to be careful not to get splinters.
Seeing as hos he's combining it with sharp edges and stronger metals, it's not implausible.
Long story short: Even if it doesn't cause cancer, I'm not eating any of his cookies.
