Almost seems like it started as some sort of "delicacy" that people overcharged for, then became too good of a money maker. I wouldn't have a problem if the whole shark was used. Just seems like a really big waste

I don't understand why Gordon cares. This guy purposefully served meat to vegetarians and laughed about it, and yet he cares about preserving sharks? Maybe he's concerned with the environmental effects of underpopulation, but there's pretty much worse overpopulation effects related to breeding so many animals for the culinary meat market. This guy is a tool that likes to be on tv.

He's allowed to care selectively, just as we all are. Underbreeding in the ocean has worse repercussions than on land, especially with animals that aren't apex predators that the pyramid depends upon. I don't buy into the whole "raising awareness" thing, but according to those diners, they didn't know the rest of the shark was wasted.
