You're honestly complaining about manufacturing processes being "automated"?
Of course they're automated! If they made cheese in a barrel with nothing but man power, the company would make twenty maybe twenty-five cheese blocks a day as opposed to the 1800 or so in a little less than 5 hours. Supply and demand requires everything to be automated.
Perhaps you'd be happier moving to an Amish sect. I'm sure they'd be more than happy to accommodate you. Spoiler alert: You'll have to leave your computer behind. But you'll be able to man-handle your cheese to your heart's content.
